A couple of questions about pickled watermelon?

I was watching the show "chopped" and on it one of the chefs made pickled watermelon. It made me curious so I asked a friend about it and she said that they usually only use the rinds of the melon and you can make it really easily with leftover dill pickle juice. Is this correct? I'd like to try and make it. Also what would you serve it with? Thanks in advance.
